PUNJABI DAL TADKA
A bowl of rice, hot dal and a generous dollop of ghee is the very definition of comfort food. Dal Tadka is a favourite at most restaurants and in most households as well! Really simple to make and filled with loads of flavor, this delicious broth of dal, onion, tomatoes and tadka makes for a comforting family meal like no other. Method
To start, wash the dal and add it in a pressure cooker along with 3 cups of water and salt to taste.
Pressure cook the dal until it is thoroughly cooked and then remove the pressure cooker from heat and let the pressure release.
Now, heat ghee in a pan and once the ghee is hot, add onion and fry until they turn slightly brown.
Add ginger and garlic and fry for a minute.
After this add green chili and tomato and cook for another 2-3 minutes until tomato becomes mushy.
Now add turmeric powder and red chili powder and the cooked dal in the pan and adjust the amount of water and salt. Bring the dal to a boil.
Simmer the heat and let the dal cook for 4-5 minutes.
Finally add lemon juice and mix well.
For tempering
Heat ghee in a pan and once the ghee is hot, add cumin seeds and heeng.
Let them crackle for a few seconds and then add dry red chilies and garlic and fry until garlic turns brown.
Pour the tempering over the dal and mix well.
Garnish with fresh coriander.
